Smothered Pork Chops

Hello friends! Can you believe it’s the weekend again? Fridays are my favorite days out of the week… Friday mornings when the alarm goes off, I get to turn them off knowing the next 2 days I get to sleep in a bit more. My clients are usually more laid back on Fridays also, so there’s less time spent on emails and phone calls, more time spend on actual design work and some cyber browsing. I do not cook on the weekends (Hince the blog name: Weeknite Meals), so Friday nights are super relaxing, hubby brings little girl and I to a restaurant of our choice, and we would order a cocktail or wine to wind down the week. Which day out of the week is your favorite?

While Thanksgiving food shopping, I noticed the pork chops were on sale. I have not cooked them for a while, since no matter what I try, the results never turned out quite like how my Mom makes them. I do notice hubby likes to order pork chops when we go to nice restaurants, so I’ve decided to look for some American style recipes and give them a try. This recipe was real simple and quick, though I was a bit skeptical while cooking. Worried the pork chop would turned out dry and cardboard like… Thank goodness hubby said “It’s good!” as soon as he took a bite, little girl loved it also! It always makes my day when the family enjoys their dinner!

Ingredients

1/2 cup all-purpose flour
2 tablespoons onion powder
2 tablespoons garlic powder
1 teaspoon cayenne
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
4 pork chops, 3/4-inch thick, bone-in
1/4 cup olive oil
1 cup chicken broth
1/2 cup buttermilk
Chopped fresh flat-leaf parsley, for garnish

Directions

Put the flour in a shallow platter and add the onion powder, garlic powder, cayenne, salt, and pepper; mix with a fork to distribute evenly. Pat the pork chops dry with paper towels to remove any moisture and then dredge them in the seasoned flour; shaking off the excess.

Heat a large saute pan or cast iron skillet over medium heat and coat with the oil. When the oil is nice and hot, lay the pork chops in the pan in a single layer and fry for 3 minutes on each side until golden brown. Remove the pork chops from the pan and add a little sprinkle of seasoned flour to the pan drippings. Mix the flour into the fat to dissolve and then pour in the chicken broth in. Let the liquid cook down for 5 minutes to reduce and thicken slightly. Stir in the buttermilk to make a creamy gravy and return the pork chops to the pan, covering them with the sauce. Simmer for 5 minutes until the pork is cooked through. Season with salt and pepper and garnish with chopped parsley before serving.

    Wow! Yummy looking pork chop! I cooked pork chop only once but it turned out bad! šŸ˜¦
    Since then, I’d never ever cook it again. I find that it’s so much easier to cook chicken wings bcoz you’ll never ever get it wrong no matter how you cook it (unless burnt). LOL šŸ˜›
    Maybe I should get the courage again!? I love how you used a little of the seasoned flour to make the gravy! šŸ˜€
    I love Tuesdays and Fridays now because my hubby will bring us out anywhere! Especially now that it’s the sch vacation and it’s near Christmas followed by our Lunar Chinese New Year! Meaning we can go shopping for the gals’ clothes and accessories! šŸ˜‰

      Hi Lyn! You are totally right about chicken wings, I made the miso one from Nami’s recipe and they turned out sooooo yummy! Normally I make Chinese style pork chops, they are pretty easy to make and the meat almost always turn out tender, but my Mom still makes them best so I’ve decided to test other recipes around.

      Ahhhh, the holidays at Asian must be so much fun! I remember the LONG break for Chinese new year, it was so wonderful to see family and receive red envelopes as children! At Houston it’s not even half as festive, though we do go see the lion dances and that’s always fun. Hope you have a wonderful weekend!

    Jeno, your pork chops look fantastic and juicy. I love pork, but never buy pork chops… I make either a pork roast or Asian wraps and stir-fries or things with ground pork.
    I understand you very well: I love Fridays, especially Friday night with a glass of wine or cocktail… the whole weekend is waiting! Do you have casual Fridays at work? I was always wondering if it’s widespread in the US (you know, wearing jeans etc.).

      Hi Sissi! Thank you! Houston is a very casual city when it comes to dress codes, I think most companies do have Casual Fridays. Though since I work for myself, everyday is casual!

I’ve never used buttermilk for porkchop but it looks delicious! Very easy cooking for week night meals, you always know great recipes to feed family. šŸ˜‰

  4. Got to say I love Fridays too but Saturdays are also my favorite because I can sleep longer..kids don’t go to school:)))

I don’t have a favorite day of the week (probably because I don’t have anybody to take me out to a nice restaurant on the weekends šŸ˜‰ ), but I like weekends because then I don’t have any other obligations and can devote them to my own things completely, or just sleep. šŸ˜›

      It’s now Friday afternoon again, 2 weeks of holiday season ahead so most people are pretty relaxed. My little girl is out of school and I will be on holiday schedule with my work, so hopefully everyday will be my favorite in he next couple of weeks. Happy Holidays!
