Taiwanese Beef Noodle Soup (Slow Cooker): Weeknite Meals

My parents make a killer Taiwanese Beef Noodle Soup, it normally takes a whole day of prepping and cooking, just the thought of eating it makes my mouth water! I have been searching for an easier alternative that’s also tasty, my goodness this could be the one! My husband normally complains about the amount of noodles I serve him, when I served this a few night ago, after the first bite, he said “Oh it’s GOOD!”, then proceed to finish the whole bowl in record time. I hope you will feel the same also!

* 1 1/2 pounds beef stew meat
* 4 cups water
* 1/4 cup dark soy sauce
* 1/4 cup light soy sauce
* 1/2 cup Chinese rice wine
* 1/8 cup rock candy
* 3 (1-inch) slices of fresh ginger
* 2 stalks of green onion, sliced
* 3 garlic cloves, minced
* 2 red hot pepper, seeded
* 1 bag of spice pack
* 1 cups chicken broth
* Chinese dry noodles

Put beef in the slow cooker, add all the ingredients (except dry noodles) into the pot and mix thoroughly, turn the crock pot on high for 4 hours, then low for 2 hours.

When you are ready to serve, cook Chinese dry noodles according to direction. once cooked, serve in a bowl, ladle broth and meat over the noodles and sprinkle with green onions if you wish. Enjoy!

  4. Hi Nami! I hope your family will enjoy this recipe. My husband is Vietnamese so he probably doesn’t know what authentic Beef Noodle Soup is suppose to taste like, but he is extremely picky so I am always thrilled when dinner gets his praise! I normally have a big box of dried noodles in the pantry, though my Mom likes to use the fresh noodles that are at the refrigerated section of Asian super markets. My husband finds those too soft once cooked, the dry noodles has more of a chewiness to them.

  6. hey jeno, i went to ranch 99 and wel-farm, but i couldn’t find the spice pack. where did u buy it? i found a spice pack in a red box, but it looks like it is used in pho. is that the one you bought?

    • Hi Shar, You know I have trouble finding stuff at Ranch 99 also, maybe I just need to get familiar with the place more by shopping more!

      I believe the spice pack should be at the dry goods/seasoning section, I bought mine a while back from Golden Food market at China Town. Maybe you can get one of the cashier’s to help you find it?

    • Hi Bam! This was actually an old posting from a while back, the fried tofu thing is actually radish cake (My Mom made them from scratch). The family eat the beef noodle soup up everytime, yay!
